Maotai or Moutai is a style of baijiu made in the town of Maotai, Guizhou Province, China. Maotai is made with few ingredients and uses traditional Chinese techniques of fermentation, distillation, and aging, to produce a spirit with a unique nutty, grain forward, and in many ways savory aroma and flavor. The main 3 ingredients are: sorghum, wheat based qū and water from the pristine Chishui river. Moutai’s complex taste and aroma is highly attributed to the unique production process and ingredients which are harvested according to the Lunar calendar.
The liquour is named after the town of Moutai in China where it is exclusively produced (Guizhou province). Much like Champagne or Cognac, Moutai, the spirit, can only be given that name if it is produced in the town of Moutai.
The most famous and best selling brand of maotai is produced by Kweichow Moutai, which has become the most valuable spirits brand not just in China but in the world as a whole.
